Hakka Noodles with Mixed Vegetables


Ingredients

200 gms Hakka Noodles
100 gms carrot, cut in thin and long strips
100 gm  cabbage, finely shred
100  gm  french beans, finely cut in long thin pieces
100 gm capsicum  cut lengthwise in strips
1” finely chopped ginger
1 tablespoon paste of garlic
2 onions chopped lengthwise
A pinch of aginomoto
½ teaspoon mustard powder
1 tablespoon soya sauce
1 tablespoon Vinegar
1tablespoon chili sauce
1 tablespoon tomato ketchup
½ tea spoon black/white pepper powder
2 tablespoon finely chopped coriander leaves
Salt to taste
1 tablespoon oil



      
          
Method
Boil water in a pan.
Add 2-3 drops of oil in it.
Add noodles to it and parboil it (don’t boil the noodles fully as they will be again cooked with vegetables)
Remove from stove and drain water.
Take chilled water in a pan and dish out all the noodles in it.


Heat oil in Kadhai (Wok)
Add ginger and garlic to it. Stir it.
Add onion. Cook it till the onions becomes little transparent.
Now add French beans and aginomoto to it and cook for 4-5 minutes so that the French beans are a bit cooked.
Now add carrots and stir it.
Now add cabbage and capsicum and again stir it.
Now add vinegar, soya sauce, chili sauce, tomato ketchup, mustard, pepper powder and salt and mix it well.



Drain noodles from cold water and add it to vegetables.
Mix it well and cook for 4-5 minutes till noodles are cooked.
Garnish it with coriander leaves.
Pour in serving bowl.
Serve while hot.
