Gujarati Leelo Chivdo


Leelo chivdo is prepared in Gujarat (India) during the festival season, especially during Navratri, Diwali and New Year.

Ingredients

4 medium potatoes, peeled, grated and parboiled in salt water
½ cup Bengal gram (chana dal), soaked for 4-5 hours
¼ cup sesame seeds
¼ cup chopped cashew nuts
¼ cup raisins
¼ cup caster sugar
12-15 Curry leaves
6-8 chopped green chilies
½ teaspoon turmeric powder
Salt to taste
Oil for frying

Method

Drain excess water from parboiled grated potatoes.
Drain excess water from soaked chana dal.
Heat oil in a Kadhai/wok.
Fry grated potatoes to golden yellow, drain excess oil and place them in a kitchen paper.
Fry chana dal, drain excess oil and place them in a kitchen paper.

Reduce the oil to 1 tablespoon in  Kadhai/wok.
Add sesame seeds and stir it.
Add turmeric powder curry leaves, and green chilies cashew nuts and raisins and stir it for a while.
Mix fried potatoes and chana dal.
remove from stove.
Now add sugar and salt.
Mix well the whole mixture.
Leelo Chivdo is ready to serve.  Enjoy it with tea as a snack or as it is.
Leelo Chivdo can be stored at room temperature in an air tight container for about 4-5 days.
